i'm looking to get a regular race evening(s) sorted as part of my week rather than randomly jumping and taking pot luck..

but there are sooooo many races which are the best to rewards my time input.

loved the tour of zwift as if gave me a deadline to be kitted up and ready to ride....
Following as well - As I'm in the same boat!
At top level, the KISS races congregate top racers. In staggered and categorized races the WTRL series are awesome. Very famous and crowed too are the SZR series. 3R races are all across the day and are always fun.

The timezone is critical for good races. Racing in the morning is discouraging.

There are no better in a strict sense. In any of them you can meet the pack of racers that are so similar to your performance that every race is pure epicness.

The ones that have split time interval starts. When I race I really only want to race C's, not Bs etc.

And which series do that? Also, which tool to use to easily find/filter races with split starts?

The combined mass starts don't make any sense at all imo. For obvious reasons. Don't understand why there are so many races with mass starts and so few split ones.
ZHR’s Hare & Hounds is a split start handicap race (fastest groups start later); both the Tea Race and the LaGuardia Crit Race are separated into A/B and C/D.

No easier way than to just go through the list of events, it'll show staggered (or not) start times just below the course profile. The same event will pretty much always have the same setup, so you can find a few staples to match your usual ride days. For ad-hoc riding, it’s back to the list.
